Interview with John Lanzafame:

How did you get involved with the Best of the Best competition, which qualified you for the America's Plate?

JL: My colleague entered the Dairy Farmers Caboolture Best of the Best back in January. He was selected as one of the State Finalists but already had a commitment the day of the final so asked me to step in for him. I won the NSW State Final and went on to represent NSW in the National Final, where I won three out of the four categories and the National Title.

As part of my prize for winning the National Title I earned a spot on the Dairy Farmers Australian Pizza Team which goes to NY to compete for the America's Plate.

Did you present the same pizzas in all the competitions?

JL: For the NSW State Final I had three pizzas and the National Final we had to add a fourth pizza. My pizzas were:

Meat/chicken category:
Pork belly w/ sweet & sour onions

Seafood category:
Kingfish carpaccio pizza with artichoke

Vegetarian category: Mushroom and tallegio pizza

Specialty category:
Pear & frangipane pizza with zabaglione ice cream

What did your sponsor, Dairy Farmers, do for you when you won the competition?

JL: Kissed and hugged me firstly. They spent the evening of the win putting together press releases to ensure as many people at home heard of our win.

Dairy Farmers have supported me greatly and ensure support for the next 12 months.

What would you say to those that would like to enter the Best of the Best competition?

JL: It helps the business a lot winning the competition. Just being one of the State Finalists helps dramatically lift business. To get to be a finalists try something different, but remember less is more.

In closing what would you like to say about the whole life-changing experience of the America's Plate?

JL: Absolutely mind boggling, fantastic. It's been a great career help for me. Everything about this comp from start to winning the America's Plate has been great.

I am currently employed as Executive Chef for Hugo's Management, working primarily for Hugo's Bar Pizza in Kings Cross.

I have previously owned and operated my own restaurant in the inner-west of Sydney.

I have a passion for Regional Italian Cuisine and am renowned in the industry for my simple ideas and perfection 'on the plate'.   I enjoy building strong relationships with prominent Italians within the industry and am proud to say these relationships have taken me around the world
